Suggested Ratio 1:16 - Coffee to Water

  1. Weigh out about 21 grams (3 tbs) of whole bean coffee.

  2. Heat filtered water to about 195-205°F (approx. 45 seconds off boiling temp), rinse coffee coffee filter, and discard rinse water.

  3. Grind coffee on a medium/drip setting - should be about the size of Kosher Salt.

  4. Start your timer and pour about 42 grams (1.5 fl oz) of water on the coffee evenly and wait 30-40 seconds to allow the coffee to “bloom” (if coffee is fresh, it should bubble up).

  5. Pour water slowly and steadily in circular motions starting at the center of the grounds and working your way out and then back in. Repeat this so the water is steadily flowing but the water level never reaches more than 3/4 of the height of the filter.

  6. By 3 minutes you should have poured about 336 grams (12 fl oz) into the coffee.

  7. Wait for all the liquid to drip through and you should be left with about 270 grams (9.75 fl oz) of delicious coffee.

  8. Give the brewed coffee a swirl, allow it to cool down a bit, and enjoy!

For this recipie we use the Hario Mizudashi - but it will work for any brewer.

  1. Grind about 70 grams of coffee to a medium-coarse grind. (think sea salt)

  2. Place coffee ground in the filter

  3. Slowly pour 1 Liter (34 ouces) of fresh, filtered water through the grounds

  4. Place the brewer in the refridgerador and allow to brew for 14-18 hours
